Preparation
Spelt sourdough bread
You add (for 2 loaves):
- 700 g spelt flour type 630
- 300 g whole spelt flour
- 2 sachets of BIOVEGAN Master baking yeast
- 700 ml lukewarm water
- 2 tsp. salt
- some fat for the baking pan
Preparation:
Mix flour, yeast and salt well. Add 700 ml water and mix to a smooth dough. Add the contents of the bag and knead with a dough hook for 5 minutes at the lowest speed, then 2 minutes at medium speed. Let the dough rise, covered, in a warm place for 45 minutes. Then knead vigorously, divide in half and let rise covered in 2 greased loaf pans for 15 minutes.
Preheat the oven to 200 °C convection and then bake the two loaves with a bowl of water for about 50 minutes. After baking, turn out the two loaves and let them cool completely on a wire rack.
Tip: The opened bag of BIOVEGAN Spelt Sourdough Liquid can be stored tightly closed in the refrigerator for up to 2 weeks.
Please note:
1. no basic mixture can be made with the sourdough liquid.
2. the sourdough alone has no leavening power.
3. 1 kg of flour requires two bags of BIOVEGAN master baking yeast.
