Preparation

Dosage:

Approx. 1 heaped tsp (3.5 g) corresponds to around 6 sheets of gelatine
and sets 500 ml of liquid.

Preparation for hot mixtures:

Mix 3.5 g with 100 ml of liquid until smooth. Stir into the remaining 400 ml of liquid. Gently simmer for 2 mins. Leave to set in the fridge for 3 hrs.

Preparation for cold mixtures:

Mix 3.5 g with 100 ml of liquid until smooth. Gently simmer for 1 min. Leave to cool slightly, stir in 400 ml of a cold ingredient gradually. Leave to set in the fridge for 3 hrs.

Tip: Agar sets when cooling below 35 °C.
